Week of November 30th:
- Set up the rest of the Christmas decorations

- Decorate our front yard for Christmas
- Plan all family/friend holiday gatherings
- Start the "Twas the Night Before Christmas" tradition; Christopher recites this each night starting on December 1st after we do our Advent prayer


- Prepare all packages for mailing
- Order any foods necessary for Christmas
- Finish up the Christmas cards
- Pick up Christmas stamps for the cards
- Stamp all of the Cards

Holiday Plan 2014: Week 13 - Happy Thanksgiving!

Week of November 23rd:
- Stock the bathrooms with necessities for the holidays (ever been a guest at someones house and they run out of TP...it is the pits)
- Get everything out for Thanksgiving
- Make any food ahead of time for the dinner (typically done on Monday night)
- Thanksgiving day prep
- Use one or two of the crock pot meals this week
- Celebrate Thanksgiving!
- Black Friday Shopping (any last minute gifts needed?)
- Remove Thanksgiving decorations


- Set up Christmas Trees (we have three!)


- Set up Advent Wreath and Creche area


- Deep cleaning area this week: Dining Room. I usually leave this one for the week of Thanksgiving (crazy, right) but since everyone will be congregating in this room, I want it to sparkle!

Le Cellier Inspired Beer Cheese Soup


Yes Disney is still on my brain. My in-laws are visiting there right now and I would be lying if I did not say I was a little jealous. So in honor of their trip, our upcoming trip and Disney on the brain, I made a Le Cellier inspired Beer Cheese Soup.

1/4 lb bacon (finely chopped)
1 medium red onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup carrot, finely chopped
3 tbsp all purpose flour
3 cups whole milk
2 cups chicken stock
12 oz grated or shredded cheddar cheese
3 dashes of hot sauce
1/2 tsp worchestershire sauce
1/2 cup beer (dark ale preferred)
salt & pepper to taste
Chopped chives for garnish

Tip: To "chop" the bacon, I used a pair of poultry scissors and cut the bacon into small pieces. In addition, I highly recommend using a food processor with a chopping option. It saves a lot of time.

Saute the bacon in a large, heavy-bottom, non-reactive stock pot over medium heat until wilted but not browned. Add onions, celery and carrots and cook until onions are translucent and bacon has crisped. Sprinkle in flour and stir constantly for 2 minutes. Stir in milk and chicken stock, a little at a time, blending well to ensure that there are no lumps. Bring the liquid to a boil, cover and simmer over low heat for 15 minutes. Remove from heat and whisk in the cheese, hot sauce, worcestershire sauce and beer. Season with salt and pepper to taste and garnish with the chives if you like.

Yummy! Enjoy with some pretzel rolls or sticks :) Just like in the restaurant!

Holiday Planning - Update

So a holiday planning update! Over halfway there until Christmas!!! So far I am 3 for 5 with homemade gifts. My favorite is probably the wine cork christmas trees - didn't they turn out cute? I finished the 12 days of Christmas project for three of my nieces and nephew and I complete my homemade Disney heart ornaments. Phew. What do I have left? Santa Candy Jars and Mickey & Minnie ornaments. 


I caught up on all of wrapping. Yes - all gifts purchased thus far are wrapped!!! Yee-Ha! The next round of gifts should be getting delivered to my door this week and will hopefully be wrapped soon there after.


I have three batches of cookies done and frozen, so I am a little behind in that regard, but still feeling pretty good that I can get most of it done before we leave for Disney.

This past week I started addressing Christmas cards! Woo Hoo!! Although we didn't get a family picture this year, I am thinking about including a picture of the four of us in the house. We shall see!

Halloween 2014


Halloween 2014 is in the books. Our little Shelties dressed up for the event too. Marv dressed up as Super Dog, complete with a cap and Jameson dressed up as Winnie the Pooh. My favorite part of his costume is a little bee sewn near his butt.



At the office, we celebrated Halloween with a trick or treat parade around our floor. Our pod did a theme this year of Christmas morning, so we pulled out the Christmas tree, wreaths and we all dressed in our xmas pajamas.


Employees are able to bring in their children to trick or treat office to office.




I love seeing all of the kids. We hear so much about them at work, it is so great to meet them and play for a couple hours.




On actual Halloween I tried to wear all the black and orange I own, black I own a lot, orange not so much. But I think I did pretty well.


At home, we got probably 125-140 trick or treaters this year. The weather was pretty crappy out; kudos to the kids who trick or treated in the cold and rain. Our house was giving out several pieces to each kid and glow bracelets. My mom came over again this year to help hand out the candy. She also made dinner - aren't moms the best? She made Bubble Pizza and you can find her recipe here.

Fall Drive


A couple of weeks ago, Christopher and I took a little day trip to drive down South to see the foliage change. It was a perfect day for a drive.



We had fun stopping at various antique stores and found a couple of treasures, but nothing we decided to purchase.


We capped off our trip by stopping at Mayer Brothers Cider Mill and loaded up on apple cider and doughnuts. Yummy!


Renovation Update!


We are done with our renovation project, at least for 2014. All of the framing is up! I can finally envision the space. And wow do we have a lot of it!!!



So excited for the Spring to come so we can bring back the electrical and heating/cooling team. Then the bathroom fun starts!

- Order or buy the Thanksgiving Turkey
- Take down Halloween and put up Thanksgiving; I cheat a little - I decorate for "Fall" and then put little Halloween stuff here and there. Then when Halloween is over, it is an easy swap out the Halloween for Thanksgiving
- Continue to work on Christmas cards
- Check smoke detectors and change furnace filter (Happy Daylight Savings!)
- Start polishing any silver pieces I will use for Thanksgiving
- Deep cleaning area this week: Living Room/Family Room. As this is one of the heaviest used rooms in the house, it needs to be deep cleaned twice!

- Start addressing our Christmas Cards (note: I picked up my Christmas cards last year during post-Christmas sales - score! Therefore, did not have to order any)
- Deep cleaning area this week: Pantry. I should have specified this last week, so if you were superhuman and cleaned both your kitchen AND pantry you get a gold star. For me - it is two separate tasks.

Disney Fever


This past week we made our FastPass+ reservations for our upcoming trip! Christopher also ordered us a Disney planning DVD to watch. Not that we need it, but it gets us so excited for our upcoming trips.

In addition, we also booked our May trip with our parents. We really wanted to get into the Boardwalk Villas, but unfortunately we were waitlisted :( But we are booked at Saratoga Springs - so worse case scenario (not really "worse" case) we definitely have a place to stay even if it is not our first choice.


When Christopher and I watched the DVD, we made special Disney cocktails and used our Magic Cubes from Disney in the drinks - pretty festive, right?

And of course, the week would not have been complete without some people making comments like "Another trip to Disney?" "Didn't you just get back?" "Why Disney?" Well...it is our money, our time and we are going to vacation how we want to!

- Deep cleaning area this week: Office; not an essential room in our house but it some how becomes the room we drop all our crap in. Time to organize it!

Another Anniversary Dinner


Boy are we spoiled! Christopher's parents took us out to an amazing dinner at Melting Pot. We indulged in four courses of pure deliciousness.

We started out with the Garlic and Herb Cheese Fondue - very mild and good for large crowds. Every one enjoyed it. Then we all ordered the Pear & Gorgonzola Salad which was also yummy and served with an apple cider vinaigrette. For our main entree, we each enjoyed our own sampler platter of raw meats to dip in the broth. I was at first nervous to cook my own meat, but it was super easy. I had the French Quarter which included beef, chicken, shrimp and Andouille sausage. Then...the chocolate course. We ordered the pure milk chocolate and it was a dream. Our waitress then surprised us with free champagne and a special dessert plate with milk and white chocolate drizzled strawberries.

It was a great time and so generous of my in-laws. Still hard to believe that three years has passed since our beautiful wedding day!


Roasted Tomato Basil Soup


With Fall in full gear, I am ready for soup weather. At least soups that I like to make and are willing to eat. I recently got into soups and decided they were not too bad (I know Mom - who am I??). I googled tomato basil soup, as this is one of my favorites to get at restaurants, and found an easy and delicious sounding recipe from the Food Network's Ina Garten.

I made it and it turned out great! Even Christopher liked it and he really isn't into tomato based soups. I think he was hoping I would make a beer cheese soup, or something along those lines.

Here are the easy directions. Plus - your kitchen will smell fantastic while it is stewing :) Perfect for football Sundays.

3 lbs plum tomatoes, quartered
1/4 cup plus 2 tbsps olive oil
2 tbsp salt
1 1/2 tsp freshly ground black pepper
2 yellow onions, chopped
6 garlic cloves, minced
2 tbsp unsalted butter
1/4 crushed red pepper flakes
1 28 oz can of plum tomatoes
4 cups fresh basil leaves, packed (you read that right - 4 CUPS)
1 tsp fresh thyme leaves
1 quart (4 cups) chicken stock

Preheat the oven to 400 degrees. Toss together the tomatoes, 1/4 cup olive oil, salt and pepper. Spread the tomatoes in a single layer on a baking sheet and roast for 45 minutes.  While the tomatoes are roasted, cut and mince all other ingredients. In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme and chicken stock. Add the oven-roasted tomatoes, including the juice and extra liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes.

Ina Garten uses a food mill to puree the soup. I do not have a food mill, so I used our food processor and the puree option. Note - this will get really messy, but it is totally worth it! We served the soup hot and with a little sprinkle of cheddar cheese on top!

Buffalo Scallops Recipe



Who doesn't love anything Buffalo? I saw this recipe on Pinterest a while ago for Buffalo Scallops. At first, I was pretty hesitant because I wasn't sure how seafood and buffalo sauce could possibly mix. But I put my brave girl pants on and tried it for dinner the other night. And it wasn't all that bad. I honestly thought the seasonings used in the recipe for a little much and made the scallops a lot hotter than I would prefer, but with a little tinkering with the recipe, I think we will make this again. Christopher thought the same thing and wondered why I would follow the recipe if I know I can make it better - next time I guess.

I will share with you below the recipe that I used, but eventually if I make this again, I will repost the changes made.

1/2 lb bay scallops
1 tsp Cajun seasoning
1/2 tsp crushed red pepper flakes
1 1/2 tsp olive oil
1/8 cup bread crumbs (it is so crumbly in the picture because I accidentally poured more crumbs than needed - oops - definitely do not do that)
1/2 cup Buffalo sauce of choice

Preheat the oven to 350 degrees. In a bowl, combine the spices, olive oil and bread crumbs. In a greased 8x8 Pyrex dish, layer the scallops in a single layer and sprinkle the bread crumb mixture over the top of the scallops. Drizzle 1/2 of the Buffalo sauce over the top of the scallops & crumb mixture. Bake for about 12-15 minutes or until the scallops are cooked through. Toss with remainder of the Buffalo sauce and serve.

I served ours with a side of green beans.

Update on Holiday Planning & Renovation

Soooo with holiday planning in full swing AND our renovation kicking up to wind down for the winter, I ended up switching some of my cleaning tasks around.

Our upstairs renovation is right next to our master bedroom. If anyone has ever had some work done on their home, you know how much dirt and dust is kicked up in a project. Therefore, I decided to switch my bathroom and bedroom weeks. I started cleaning the bedroom, but then I realized that all of the work I have done is just going to get dirtied up the next day when the contractors are on site.

So I have switched around some of the bathroom and bedroom tasks and will complete them over two weeks. This way, my holiday cleaning is still getting down, but I am also keeping some sanity with the project going on.


With that said...Day 2 of our contractors work is complete. They finished tacking up all of the baffles and started framing. The room is really starting to take shape. When meeting with all of the various parties involved in the project, I still have a hard time picturing the space and what is going in.


I can now start to visualize it with the framing going up! Yesterday they completed the framing that will be become the wall of the bedroom and bathroom and built the half wall in the bathroom. See the picture below with Christopher demonstrating the halfway and toilet area - silly guy!
